How To Roast An Eggplant
Wash and then dry the eggplant. Rub a little oil all over the eggplant.
Place the eggplant on a steel mesh, or directly on to the hob if you don’t have one (I didn’t for the longest time, its just a little messier). Keep turning as the skin blackens (tongs help). Don’t be afraid if it looks burnt – all that skin’s coming off.
When the skin has blackened, remove, put it on a plate and let it cool. Peel off the burnt skin and then hold it one hand and with the other hand wash water over it for the stubborn black bits. You don’t want water to soak in or lose any of the juices inside the eggplant.
You’re ready to use your delicious smoky eggplant.
